½ pound unsalted butter (room temperature)
1 ¼ cups fine granulated sugar
½ teaspoon vanilla
¾ cup cocoa powder
3 cups cake flour
2 ½ teaspoons baking powder
¼ teaspoon salt
1 dash cinnamon
Step 1- Preheat oven to 350
Step 2- Using an electric mixer, cream the butter and sugar. Add vanilla and eggs, beat until combined.
Step 3- In another bowl, whisk together the cocoa, flour, baking powder, salt and cinnamon.
Step 4- Add mixed dry ingredients to the butter mixture gradually, beating at a low speed.
Step 5- Divide the dough into two sections and roll into logs. Slice into even rounds about 1/3 inch thick and bake on parchment paper for about 10 minutes. Remove from oven and let cool.
