Pumpkin Spice Bread

This recipe is coincidentally vegan, and works well with whatever sweetener you have on hand. I favor dark sugars, honeys, and syrups but you can use white sugar if that's your thing. Cut the baking time in half to make muffins.

1½ cups Any combination of Brown Sugar, Molasses, Honey, or Maple Syrup
½ cup Vegetable Oil
1½ cups Fresh Pumpkin Puree
1 teaspoon Vanilla
1 teaspoon Salt
1 teaspoon Baking Soda
½ teaspoon Baking Powder
½ teaspoon Cinnamon
½ teaspoon Nutmeg
3 cups Flour


Step 1
Combine everything except flour in a mixing bowl.

Step 2
Lightly incorporate flour, but don't mix too well. There should still be some lumps when you are finished.

Step 3 Pour into greased loaf pans.

Step 4 Bake at 350 degrees for approximately 50 minutes, or until a toothpick stuck in the center comes out clean.
