Grilled Chicken Sandwich

Say goodbye to bland and boring grilled chicken sandwiches and try this recipe instead.

This isn't any old grilled chicken sandwich--it has some unique twists. Flavorful and zesty are good words to describe it.


1 avocado peeled
1 teaspoon lemon juice
4 skinned and boned chicken breast halves
½ cup Jalapeno-Lime Mayonnaise (see below)
4 sandwich buns or kaiser rolls split
4 slc provolone cheese
4 lettuce leaves
1 medium tomato sliced
½ cup mayonnaise
1 jalapeno pepper minced
1 teaspoon grated lime rind
2 teaspoons fresh lime juice


Step 1-Mash avocado, and stir in lemon juice. Set aside.

Step 2-Brush chicken with 1/4 cup Jalapeno-Lime Mayonnaise. Grill chicken, covered with grill lid, over medium-high heat (350 to 400 degrees) 5 minutes on each side or until done.

Step 3-Spread 1 side of each bun evenly with remaining 1/4 cup Jalapeno-Lime Mayonnaise; spread bottom halves with avocado mixture. Place chicken over avocado, and top with cheese, lettuce, and tomato. Serve immediately.

Step 4-For Jalapeno-Lime Mayonnaise: Stir together all ingredients; chill. (
