Easy Caribbean Style Fried Flying Fish

 
Flying Fish is found in abundance in the waters of the Caribbean Sea and is the fish of choice in the island of Barbados. The fish derives its name from its unique characteristic of jumping in and out of the water as it moves along. A tropical delight!

Ingredients:

1 pack frozen Flying Fish (usually contains 5)
1 Lime
1 tablespoon Salt
5 tablespoons Fresh Herb Seasoning
1 cup Flour
1 teaspoon Baking Powder
Canola Oil for shallow frying

Procedure:

Step 1 - Remove Flying Fish from the package and allow to thaw.

Step 2 - Place Fish in a bowl. Add salt and juice from the lime.

Step 3 - Allow to sit for 5 minutes then rinse with water.

Step 4 - Next it's time to add seasoning to the fish.

Step 5 - Place 1 tbs of Fresh Herb Seasoning into the slits of each fish.

Step 6 - Mix flour and baking powder.

Step 7 - Coat fish with flour mixture.

Step 8 - Fry Fish on medium heat until golden brown.
