Ingredients
4 cups broccoli florets, rough chopped
1 large red bell (capsicum) peppers, chopped
½ cup red onion, chopped
½ cup walnut pieces
¼ cup parsley, minced
¾ cup light mayonnaise
2 tablespoons cider vinegar
2 tablespoons sugar
salt and pepper to taste
Preparation
Step 1- Combine mayonnaise, vinegar and sugar in a small bowl.
Step 2- Combine remaining ingredients with mayonnaise.
Step 3- Refrigerate for 30 minutes before serving.
Yield: 4 servings
