Question Whats for dinner

Either today or this week any menu ideas?

Tonight is Chicken Parmesan with spaghetti/ bread/ salad strawberry shortcake for desert (you know I have to have desert ladies LOL!)

My husband asked me the other day what my favorite dinner was, I knew immediately. It's a meal I call Oriental Chicken. It was based on a recipe I found in a magazine years ago, but I changed it so much, it's hardly recognizable.

I cook it in a pressure cooker, but a slow cooker would work as well. Chicken, soy sauce, brown sugar, raisins, corn starch, table wine (cheap from the market) & water (enough water to cover everything if you're using a pressure cooker). Cook it all till tender, and serve over rice (or noodles). The measurements are all as my grandmother used to say, "a bissle of this and a bissle of that." I use several pieces of boneless, skinless chicken, a handful of raisins, a couple tablespoons of brown sugar, a tsp of cornstarch, a cup of wine & water. I use white jasmine rice.

Tonight we're having a fried fish but that's only for my hubby.. For the kids, I prepared fried chicken with soup.. Like it..

For me today as usual apples, pine apple, fresh salad and a dozen of nuts! Sounds great and it would be nice to mix all of it in one dish!

Tonight I will be making Pizzas WOOHOO! We all love Pizza night! I like to make my own Turkey pepperoni, fresh veggies yummy!

Rice salad with lemon dressing:

Ingredients:

2 green onions (scallions), thinly sliced
2 to 3 cloves of garlic, crushed and finely minced

Add to vegetables; cover and refrigerate for an hour. Add cooked, cooled rice; add salt and pepper to taste. Refrigerate until serving time. Delicious with grilled or broiled steak, fish or seafood
