My husband asked me the other day what my favorite dinner was, I knew immediately. It's a meal I call Oriental Chicken. It was based on a recipe I found in a magazine years ago, but I changed it so much, it's hardly recognizable.
I cook it in a pressure cooker, but a slow cooker would work as well. Chicken, soy sauce, brown sugar, raisins, corn starch, table wine (cheap from the market) & water (enough water to cover everything if you're using a pressure cooker). Cook it all till tender, and serve over rice (or noodles). The measurements are all as my grandmother used to say, "a bissle of this and a bissle of that." I use several pieces of boneless, skinless chicken, a handful of raisins, a couple tablespoons of brown sugar, a tsp of cornstarch, a cup of wine & water. I use white jasmine rice. Enjoy! |

For me today as usual apples, pine apple, fresh salad and a dozen of nuts! Sounds great and it would be nice to mix all of it in one dish!

Ingredients: 2 green onions (scallions), thinly sliced 2 to 3 cloves of garlic, crushed and finely minced 1 small summer squash, diced 1 large tomato, diced 1/2 red bell pepper, minced 1 cup spinach leaves, rolled together tightly and very thinly sliced (chiffonade technique) 2 tablespoons finely chopped fresh parsley 1 small carrot, grated or minced 1/4 cup fresh lemon juice 1/4 cup extra virgin olive oil 1 1/2 to 2 cups cooked rice salt and pepper to taste Toss prepared vegetables together in a glass or ceramic bowl. In a small bowl with the lemon juice, drizzle olive oil while whisking, to emulsify the liquids. Add to vegetables; cover and refrigerate for an hour. Add cooked, cooled rice; add salt and pepper to taste. Refrigerate until serving time. Delicious with grilled or broiled steak, fish or seafood Enjoy your meal ![]() |
