Holiday Recipe Thursday - Cinnamon Swirl Apple Cake

    Cinnamon Swirl Apple Cake


    cup coconut flour

    ⅓ cup almond flour

    ⅓ cup erythritol granular

    1 Party Time Mixes Cinnamon Swirl Dessert Mix

    1 teaspoon baking powder

    teaspoon baking soda

    3 eggs

    cup unsweetened almond milk

    ⅓ cup unsweetened applesauce

    5 tablespoons butter

    teaspoon vanilla extract

    2 large apples, diced

    Crumble Topping Ingredients:

    2 tablespoons almond flour

    2 tablespoons erythritol for low carb, like this one.

    2 tablespoons unsweetened shredded coconut

    2 tablespoons butter

    2 tablespoons Party Time Mixes Cinnamon Swirl


    1. Preheat oven to 375 degrees F, and grease loaf pan.

    2. In a large mixing bowl, combine coconut flour, almond flour, granular sweetener, 1/2 package dessert mix, baking powder and baking soda. Mix together thoroughly. Set aside.

    3. In another large mixing bowl, combine eggs, unsweetened almond, unsweetened applesauce, 2 tablespoons butter and vanilla extract. Mix together thoroughly.

    4. Add wet egg mixture to dry coconut flour mixture and stir together thoroughly.

    5. Pour the mixture into the loaf pan and spread around evenly.

    6. In sautee pan, combine apple, 3 tablespoons butter and 3 teaspoons dessert mix until apple is soft. Put on top of batter in loaf pan.

    7. In a medium sized mixing bowl, combine all the crumble topping ingredients and mix together until a pasty meal forms.

    8. Spoon or sprinkle clumps of crumble topping mixture all over the top of the apples in the loaf pan.

    9. Bake at 375 F for 35 to 40 minutes or until toothpick comes out of center clean.
