Hi people! Ready to start your holiday recipe planning? I love to start mine off with Pumpkin Pie cupcakes 🧁. Easy to make for any kids party or as a yummy treat for your family.
Please share your favorite holiday cupcakes with me. Then come back every Thursday for a NEW holiday recipe I will be sharing with you. Pumpkin Pie Cupcakes Homemade Cupcake Ingredients: 3/4 cup white sugar 1 PTM Pumpkin Pie Dessert Mix 1/2 cup butter, melted 2 eggs 2 teaspoons vanilla extract 1 1/2 cups all-purpose flour 1 3/4 teaspoons baking powder 1 teaspoon baking soda 1/2 cup milk Homemade Cupcake Instructions: 1. Preheat oven to 350 degrees F. Line a muffin pan with paper liners. 2. In a medium bowl, add sugar, butter, eggs, milk, all dessert mix (except 1 tablespoon, keep for garnish) and vanilla. Beat until creamy. Add flour, baking powder and baking soda. Beat until smooth. 3. Spoon batter evenly into each paper liner in the muffin pan. Only fill each liner to half way up so that the cupcake has room to rise and expand without over flowing the liner. 4. Bake for 20 to 25 minutes. Cupcake is done when it springs back to the touch or toothpick in center of cupcake comes out clean. Frosting Ingredients: 8oz cream cheese, softened 8oz whipping cream, thawed 1 PTM New York Cheesecake Dessert Mix Frosting Instructions: 1. In large bowl, combine cream cheese, whipped topping and dessert mix. Beat until creamy and smooth. 2. Spoon cheesecake frosting into decorating bag and pipe the frosting onto the top of each cupcake. 3. Sprinkle left pumpkin pie dessert mix over frosted cupcakes as a garnish. IMPORTANT - If you don't want to make cupcakes, this also be used as batter for a 9x9 inch pan! If you do, bake for 30 to 40 minutes! Have a great day!
