Garlic Galore Wings
12 wings cut in half at the joint or a bag of wing dings.
Rinse chicken wings in cold water and place into a shallow baking dish. *OPTION: lightly season wings with seasoning salt and pepper* Sprinkle the wings evenly with the seasoning, and let them marinate, covered and chilled, for 1 hour.
I only used enough to coat the chicken.
Wisk 2-4 eggs (depending on how many wings)and more Garlic Galore Mix if desired. Reserve. Use 2 cups of all-purpose flour, place in shallow dish or pie plate. I used a large Ziploc bag. In a large deep-fryer or large Dutch oven heat oil to 350 degrees F on a deep-fat thermometer. I used my spaghetti pot and half the bottle of vegetable oil. Flung some flour in (just a pinch to see if it fried instantly) to test the temp..and VOILA!!
Dredge chicken wings into the egg mixture then into the flour. Place wings 3 at a time into the hot oil and cook for 8 to 10 minutes, turning occasionally, until cooked through and golden brown. I filled up the pot till no more could fit. Remove to a paper towel lined sheet tray. I used a paper plate with 4 paper towels. Make sure oil returns to temperature before adding the next batch. Did the flour fling test again. Sprinkle the wings with the reserved seasoning for extra Garlic Galore Flavor!!
Serve with Spicy Dipping Sauce.
Dipping Sauce :
Mix well a packet of Texas Ranch (Spicy) and 2 cups light sour cream. I took some out the container with a spatula, put in the Mix, stirred and put the rest of the sour cream back in...stirred it some more with a fork so it was well blended and put the lid back on.
Chill 1 hour.
*Final results were pretty tasty! Next time I fancy pre - seasoning the wings with seasoning salt and pepper. Then mixing 1 pkg of Mix with 2 cups of flour, skip the egg and just fry them up!!!
