Default Laksa Noodle Soup

Ah, this is genuinely my favourite thing at the moment, so thought I'd share it with you all!

It also only takes about 20 minutes, so ideal for us busy mums

Serves 2:

Ingredients:
- 2 garlic cloves, crushed
- 4 tsp of finely chopped ginger
- Spring onions (a good few of them)
- 2 green chillis, finely chopped and seeded
- juice from 1 lime
- 200g prawns (raw or cooked... I prefer buying cooked)
- Coconut milk (I used as much as I needed to make it soupy)
- 200ml vegetable/chicken stock (but again, used my judgement here)
- 200g dried egg noodles
- Salt and pepper
- Chopped coriander

Method:
- Heat oil in pan or wok. Cut up the garlic, ginger, spring onions, and chilli and allow to soften in a pan. Then squeeze in the lime juice.
- Throw in the prawns and allow to cook/heat up.
- Add the coconut milk and stock. Allow to simmer.
- Meanwhile boil water, and then cook egg noodles until soft. Drain, and then add them to the soupy pan.
- Season to taste and then serve (with the coriander).

Voila! Give it a go... I promise if you like Asian food then you'll really like this
