I'm constantly trying to make my old favorites a bit healthier so of course i had to try my hand at Stuffing. Here's a recipe I came up with that uses Quinoa in place of bread. I used ingredients that my mom used to use in her stuffing but you can certainly swap out any of the ingredients and use your own family recipe.
Holiday Recipe | How To Make Sausage Stuffing - YouTube INGREDIENTS Quinoa 1 Cup Onion 1 (diced) Trader Joe’s Smoked Apple Chardonnay Chicken Sausage (optional..use whatever sausage or ground meat you’d like) 4 links (12 oz) Celery 4 Stalks (diced) Chicken Broth (you can also use veggie, turkey or beef broth) 2 1/2 Cups (approx) Poultry Seasoning 1 TSP Sage 1 TSP Pepper 1/4 TSP Salt to taste Olive Oil Spray RECIPE In a saucepan add 1 Cup of Quinoa and 2 Cups of Chicken Broth. Spray a little bit of Olive Oil to make sure it doesn’t stick. Bring to boil. Once your Quinoa starts boiling, cover and simmer for 15 minutes or until the broth has evaporated. Remove the casing from your Chicken Sausage and chop up. Spray down a skillet with Olive Oil Spray and add your Sausage. Using a spatula break down your Sausage into smaller bite size pieces. If your skillet starts to get dry just add your Chicken Broth. Once you’ve broken down your Chicken Sausage move the sausage to the edges of the skillet and spray down the middle of your pan with Olive Oil Spray. Add your Celery and Onion and allow to soften. Add your Poultry Seasoning, Pepper and Sage. Once your Veg has softened you can add your cooked Quinoa to a large bowl and then add your Sausage and Veg. Mix well and add salt to taste and about a 1/4 cup of Chicken Broth to moisten. Place your Stuffing into a casserole dish that has been sprayed down with Olive Oil Spray. wow...that sounds great. I don't eat bread and love quinoa. I will have to try this!

Sounds good. I have some quinoa and some chicken bones taht need to be turned into bone broth! Maybe this is on the menu for tomorrow.
