What You'll Need:
1 5 ounce can of Evaporated Milk 3/4 cup of Sugar (you can use whichever sugar substitute you'd like) 2 tablespoons of Unflavored Gelatin 1 3/8 cups of Boiling Water 1 teaspoon of Coconut Extract 2 Egg Whites What To Do: Spray down your jello mold. I used a silicone muffin tray to make portioning out easier. Get a large bowl and add your Unflavored Gelatin. Next add your Boiling Water and stir until Gelatin is disolved. Next up add your Evaporated Milk, Sugar and Coconut Extract. Set this aside and allow it to cool down. Once your mixture is cooled down place the bowl in iced water. You can either do this by filling up your sink with water and some ice or what I did was get a bigger bowl and fill it halfway with water and ice and place the smaller bowl inside. Once your Gelatin starts to set beat the Egg Whites until they are fluffy. Now fold into your Gelatin mixture. Fold carefully. You don't want to mix it because that will take out all the air you just put into the Egg Whites. Once the Egg Whites are folded in start to fill up your jello mold. Place in the fridge and allow the Gelatin to set. Should take about an hour. What you'll end up with is a yummy, refreshing treat that will be great to make for any occasion! Enjoy! |
