Uptown Chicken

Want an easy, rich, moist chicken dinner? Uptown Chicken served with garlic mashed potatoes and some steamed veggies is a great choice!

4 boneless skinless chicken breasts
olive oil
salt and pepper
6 ounces white wine
1 tablespoon freshly chopped garlic
2 lrg shallots finely chopped
2 cups heavy cream
3 tablespoons sour cream
6 scallions with tops thinly sliced


Step 1- Mix together flour, salt and pepper, and lightly coat the chicken breasts. In a cold, non stick skillet, over medium high heat, saute breasts in olive oil - DO NOT BROWN!! Remove from pan, add wine and deglaze pan. Add garlic and shallots, reduce mixture until almost caramelized (will get real thick). Add cream and continue to cook until it thickens again. Stir in sour cream and scallions, heat thoroughly, blending well.
