Taffy Apple Salad

 
This is a refreshing summer dessert. Try it with salted or unsalted peanuts. This recipe is the traditional version, but it's also good with other fruit, such as grapes, bananas, or peaches.
Ingredients:

1 tablespoon all-purpose flour
½ cup white sugar
1 egg yolk
2 tablespoons cider vinegar
8 ounces can crushed pineapple, drained with juice reserved
4 apples, cored and diced
2 cups peanuts
8 ounces container frozen whipped topping

Procedure:

Step 1 Combine flour, sugar, egg yolk, vinegar and reserved pineapple juice in a saucepan and cook over medium heat until thick. Remove from heat and chill. Best of allowed to cool overnight.

Step 2
Mix the pineapple, apples, peanuts and chilled cooked mixture in a large bowl. Fold in whipped topping and chill for at least 1 hour before serving.
