-for the Taco Seasoning Mix (makes ½ cup)
2 tablespoons flour
2 teaspoons ground cumin
2 teaspoons dried oregano, crushed
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon cayenne pepper
3 tablespoons chili powder
-Filling
1 pound lean ground beef
1 piece onion, chopped fine
2 tablespoons canned green chiles, chopped
¼ cup Taco Seasoning Mix
-Fixin's
½ head shredded lettuce
4 piece plum tomatoes, seeded and chopped
1 piece green onions, finely chopped
1½ cups Cheddar cheese, grated
1 cup salsa
¼ cup sour cream
6 shells Taco

Procedure:
Step 1 - To prepare the mix: combine the chili powder, flour, cumin, oregano, onion powder, garlic powder, salt and cayenne in a plastic zip-type bag; shake the bag until completely mixed.
Step 2 - To prepare tacos from the mix: Brown 1 pound of lean ground beef with 1 finely chopped onion, 2 tablespoons chopped canned green chilies and a scant 1/4 cup of the seasoning mix. Cook until the meat is completely cooked, about 10 minutes. Drain off excess fat.
Step 3 - Divide 1/2 head shredded lettuce among 6 taco shells. Fill with the meat mixture, 4 plum tomatoes that have been seeded and chopped, 1 green onion, finely chopped, 1 1/2 cups shredded cheddar cheese, 1 cup salsa and 1/4 cup sour cream.
