Stuffed Cinnamon Toast

 
Want an easy alternative to stuffed french toast? Stuffed Cinnamon Toast takes sandwich bread and turns it into a tasty breakfast treat!
Ingredients

2 tablespoons plus 2 teaspoons sugar, divided
½ teaspoon ground cinnamon
1 ounce cream cheese, softened to room temperature
½ teaspoon vanilla extract
2 tablespoons butter, softened to room temperature
4 slices sandwich bread
1 ½ tablespoons blackberry, strawberry, apricot or you favorite flavor of jam

Preparation

Step 1- Preheat a waffle iron while you assemble the sandwiches.

Step 2- Place a two tablespoons of sugar in a small bowl.

Step 3- Add ground cinnamon and stir well; set aside.

Step 4- In another small bowl combine the softened cream cheese with the remaining 2 teaspoons sugar and the vanilla extract; stir well and set aside.

Step 5- Spread two slices of the bread with equal amounts of the cream cheese mixture.

Step 6- Spread two more slices generously with equal amounts of the jam.

Step 7- Pairing one of the cream cheese slices with one of the jam covered slices, close to form a sandwich.

Step 8- Spread butter on the outside of one side of each sandwich.

Step 9- Sprinkle generously with the cinnamon and sugar.

Step 10- Turn the sandwich over and sprinkle the other side with the cinnamon and sugar.

Step 11- Place on the hot waffle iron and close the lid.

Step 12- Cook until the ready light comes on and the sandwich is golden brown and crispy.

Step 13- Remove sandwiches and cool for a couple of minutes.

Step 14- Be careful as the filling may be very hot.

Step 15- Repeat to make additional sandwiches.
