Smoky Black Bean Dip

No party is complete without Smoky Black Bean Dip. Just serve with a fresh grated cheddar, cilantro, a dollop of sour cream and some corn chips!

2 (15-ounce) cans organic black beans, rinsed and drained
1½ teaspoons adobo sauce (chipotles in adobo sauce can be found in your Mexican food section)
1 teaspoon salt
1 teaspoon garlic pepper, or other all purpose seasoning
2 tomatoes, diced
Juice of 1 lime
½ jalapeno (scrape out the seeds if you are sensitive to spice)
½ red onion, diced
¼ cup chopped fresh cilantro


Step 1- Place beans, adobo sauce, salt and garlic pepper in a food processor, and pulse until just broken up.

Step 2- Add the tomatoes, lime, jalapeno, red onion and cilantro into food processor with the beans and pulse until just combined.
Yield: 4 servings
