½ head lettuce
1 teaspoon Dijon mustard
1 teaspoon dried thyme
1 anchovy fillet
3 tablespoons cider vinegar
3 tablespoons olive oil
1lb green beans
2 cans tuna
6 black olives
4 potatoes
3 tablespoons real mayonnaise
2boiled eggs
½ stalk celery
1 clove garlic
Procedure:
Step 1 Boil potatoes, cube and mix with mayonnaise, diced egg and diced celery to make potato salad. Steam green beans until just tender.
Step 2 Mince garlic finely, with a sprinkle of salt. Mince anchovy fillet, or use anchovy paste.
Step 3 Add to vinegar and oil, along with thyme.
Step 4 In a large glass bowl layer lettuce, potato salad, tuna, olives and green beans.
Step 5 Drizzle dressing over top.
