Potato Curry With Sauce

This curry goes fine with bread, pita bread, Indian Naan and rice.

6 medium sized golden potatoes
3 spoons oil
1 spoon salt
½ tablespoon cumin seed
½ tablespoon black mustard seeds
½ tablespoon chilli powder
1 tablespoon turmeric powder
2 cups(1 pint) water
1 tablespoon or 5ml ginger paste
1 large tomato, finely chopped
Few finely chopped cilantro


Step 1
Boil the potato by boiling a pan of water with potatoes in it, bringing to a low boil and cook for 5 minutes then draining the water, set potatoes aside.

Step 2
Heat the oil in a pan on medium heat for 2-4 minutes. Fry the mustard and cumin seeds until they pop (about 1-2 minutes)

Step 3 Add the turmeric and red chilli powders and fry for 30 seconds.

Step 4 Add the ginger paste and fry for 1 minute, if the mixture gets too dry then add a little water.

Step 5
Add the chopped tomato and fry for 1 minute, stirring constantly

Step 6 Mix in the potato cubes, along with the water

Step 7 Reduce the heat, cover and simmer on a low heat for about 15 minutes or until the potatoes are cooked and the sauce thickens, stirring occasionally

Step 8
Mix in the cilantro and cumin powders and cook for 1 more minute, keeping the pan covered

Step 9
Transfer the dish to another bowl and its ready to be Served
