2 tablespoons honey
finely grated zest - 1 lemon
2 tablespoons lemon juice
1 tablespoon olive oil
1 tablespoon chopped fresh mint OR
½ teaspoon -- dried leaf mint, crushed
½ teaspoon salt
¼ teaspoon ground hot red pepper
4 rib pork chops (about 1 3/4 lbs, 3/4-inch thick)
Step 1- Whisk together honey, lemon zest and juice, olive oil, mint, salt and pepper in small glass measuring cup.
Step 2- Place chops in glass baking dish. Pour marinade over; turn to coat.
Step 3- Cover; refrigerate at least 4 hour or overnight, turning occasionally.
Step 4- Grill or broil 4 inches from heat 5 to 6 minutes per side or until cooked through.
