Frying Pan Cookies

Yes, these cookies are really made on the stove top.  Easy to make wheat-free too.

2 cups - Rice Krispies

2  - Eggs lightly beaten

1/2 cup  - Sugar (can use less if desired)

1 1/2 cups  - Dates, chopped

1/2 cup - Coconut flakes

2 pinches  - Salt


Step 1 - Melt some butter in low heat skillet. Add eggs

Step 2 - Stir in dates, suger and salt over a low heat for 10 minutes, stirring constantly.

Step 3 - Remove from stove and add 2 cups of Rice Krispies. Let cool.

Step 2 - Roll in balls on cookie sheet and let set before dipping in coconut.
