
Ingredients:
- 1 tsp. olive oil
- 1 egg, beaten
- 1/4 onion, chopped
- 1/4 tomato, chopped
- 1 tbsp. preservative-free bacon bits
- 6 spinach leaves
- 2 Tbsp. shredded sharp cheddar cheese
- Salt and pepper
Directions:
- Heat oil in a nonstick skillet
- Sauté onions until sweet and tender, add tomatoes and bacon bits and stir to heat though, and add spinach leaves and cook until wilted
- Add beaten egg and gently stir and fold mixture until egg is cooked through
- Season with salt and pepper
- Transfer veggie scramble to a plate and top with a sprinkle of shredded cheddar cheese
