Easy Veggie Scramble


Ingredients:

  • 1 tsp. olive oil
  • 1 egg, beaten
  • 1/4 onion, chopped
  • 1/4 tomato, chopped
  • 1 tbsp. preservative-free bacon bits
  • 6 spinach leaves
  • 2 Tbsp. shredded sharp cheddar cheese
  • Salt and pepper

Directions:

  1. Heat oil in a nonstick skillet
  2. Sauté onions until sweet and tender, add tomatoes and bacon bits and stir to heat though, and add spinach leaves and cook until wilted
  3. Add beaten egg and gently stir and fold mixture until egg is cooked through
  4. Season with salt and pepper
  5. Transfer veggie scramble to a plate and top with a sprinkle of shredded cheddar cheese
