2 sweet Spanish onions
1 cup pancake mix
¾ cup beer
Oil for deep frying heated 375 degrees
Salt
Preparation
Step 1- Peel onions and cut into 1/2 inch thick slices, separate into rings. Combine pancake mix and beer to make a smooth thick batter. Dip onion rings in batter and fry a few at a time in hot fat until golden brown. Drain on absorbent paper lined baking sheets. Keep fried onion rings hot in oven until all rings are fried.
