Crispy Beet Chips

Skip the potato chip aisle the next time you're at the grocery store and enjoy these healthy, crispy beet chips!


  • 3 beets, washed dried, stems removed
  • 1 tsp. olive oil (not much)


  1. Heat oven to 400 degrees
  2. Remove tips and stems of beets
  3. Carefully, using a thin slicer or a mandolin, slice beets into chips
  4. Toss beet chips in a bowl with olive oil and sprinkle of salt
  5. Lay beets flat on parchment paper and bake 15-20 minutes
  6. Flip beets and continue baking for another 15-20 minutes until they are crispy or dry
  7. Remove from oven and let cool
  8. Store in an airtight container (if you can resist eating them all at once)
