Chicken Salad

Quick and easy Chicken Salad! Just prepare the night before for a healthy and delicious lunch.


4 Cooked chicken breasts. diced
2 tablespoons grated onions
4 boiled eggs, chopped
1 cup light mayonnaise
½ teaspoon horseradish
1 teaspoon lemon juice
½ cup finely ground pecans
1 stalk celery, finely chopped
1 small chopped green onions
1 teaspoon celery seeds
10 red grapes


Step 1- Combine chicken, and egg with 1 stalk celery, sliced grapes, 1 small onion, 1 tsp celery seed, 1 tsp salt.

Step 2- In a separate bowl, add the grated onion, mayonnaise, horseradish, lemon juice mix well.

Step 3- Add pecans and mix well.Refrigerate overnight.

Yield: 4 Servings
