Baked Potato Soup

Baked Potato Soup is a hearty and classic dish. Great as a meal or as an appetizer!

4 lrg baking potatoes
? cup butter or margarine
? cup flour
7 cups milk
4 green onions chopped
12 slc bacon cooked, crumbled
1 ΒΌ cups shredded cheddar cheese
1 cup sour cream
1 teaspoon freshly-ground black pepper


Step 1- Bake the potatoes until done. Let cool. Peel and cube.

Step 2- Melt butter in a soup kettle or Dutch oven. Stir in flour. Heat, stirring until smooth. Gradually add milk, stirring constantly, until thickened. Add potatoes and green onions. Bring to a boil, stirring constantly. Reduce heat and simmer 10 minutes. Add bacon, cheese, sour cream, salt and pepper. Stir until cheese is melted.
Yield: 4-6 servings
