Groundhog

 



This rich dark chocolate cake looks like soil. Make it with your children and eat it as you celebrate Ground Hog Day!

Ground Hog Day Cake

1 3/4 c. boiling water
1 c. uncooked oatmeal
1/2 c. brown sugar
1 c. granulated sugar
1 stick margerine
2 eggs
1 3/4 c. flour
1/2 tsp. salt (optional)
1 tsp. baking soda
1 T. cocoa
1 (6 oz.) pkg. semi-sweet choc. chips
1 tsp. vanilla

Pre-heat oven to 350 degrees.

Pour boiling water over oatmeal; let stand 10 minutes. Add brown and white sugar. Melt margerine and chocolate chips together (save a few chips for the top of the cake). Add chocolate mixture to sugar and oatmeal. Add eggs and vanilla.

Sift together flour, soda, salt and cocoa. Combine with wet ingredients. Pour into greased mini-bread loaf pans. Bake until cake springs back when touched (20-30 minutes.)
