Absolutely, I think dummy blog would help. But you might still want to say something about how you are offering a base package and not all the bells and whistles.

As for design customization, one idea is to do something like Shoppe Pro (and other similar carts) does. They install the default shopping cart/cms and then let designers publicize their services on their site. Shoppe Pro Templates - Template Designers

That's a great idea, Susie. I'm thinking what I would do is vet possible designers to ensure that they have the particular expertise that would be needed for the blogs I'm setting up, to make sure they would be a good fit for my clients.
