I'm bad, haven't had my crockpot out in years. Keep talking about, so perhaps this winter will get something cooking in it. Fill it, set it and forget it till dinnertime sounds wonderful to me. Don't like potatoes cooked all day, so those would still be done separately.
I'll cook and serve homemade soup (with bakery bread and salad) any time of year. We like the 15 bean (and ham soup), split pea, fresh beef and bean soup, or potato, brocoli and chicken...whatever ingredients happen to be around when I'm ready to cook. We don't use much canned soups, way too salty and fatty when watching diet. I really need to cook a large batch of home made soup again soon -- my neighbors are complaining about the canned and work a lot of hours, so they would be happy to get some. One of our favs, again, any time of year (in winter I heat the plates or bowls, is angel hair pasta with poached or baked salmon, alfredo sauce, grilled mushrooms and steamed broccoli. Sometimes we rent a dvd and have our dinner and a movie night at home leisurely. It's nice to stop the movie for refills and just be comfortable. Toaster oven has a pan more than large enough for a lasagna for four or more servings, so that's any time of year. Stir fried chicken and sausage with stir fried rice (onions, peppers, mushrooms, broccoli and celery), sometimes made with a cream cheese topping and of course, soy sauce. Chili is good. DH doesn't like highly spiced, so son and I use Frank's Red Hot sauce and add more black pepper, we put beans in it. Served with a topping of tiny chunks of fresh celery, shredded cheddar and sour cream. Sometimes home made corn bread, but if time is short, you just get toast and butter. Okay, now I'm hungry again, but we don't have set winter meals. It's whatever comes to mind and what's available to put together at the time. |

Our Family just LOVES Jumbalaya! So easy to make too!
Just throw some rice in your rice cooker Get your crock pot out and: put in 1 can petite/diced tomatoes 1 can tomato paste 1 can chicken broth 1.5 tps of Cayan Pepper seasonings like Oregono, Basil, Garlic, Pepper you name it I just keep tasting and adding seasonings until the base is just how I want it. I normally always add some "better than boullion chicken" Makes it more flavorful. Then throw in some Chicken and some Sausage and let it cook! I'm lazy so I buy the pre-cooked chicken and shred it. Costs bout the same these days anyway lol

I absolutely love soup in winter; creamy potato soup, pasta e fagioli (Italian cannellini beans with pasta soup), Italian wedding soup, beef stew, escarole and kidney beans soup...

Chili, Stew, Lasagna, Dorrito Casserole, Cornbread casserole.......
Cornbread Casserole: Brown 2 lbs. ground beef with 1 large onion and 2 bell peppers diced.....drain. Add 1 cup of your favorite salsa and one can of whole kernel corn (drained) In large casserole dish layer the following in order...... Meat mixture 3 cups shredded cheddar cheese 2 pkgs. Jiffy cornbread mix prepared as per pkg. Bake @ 350 for about 45 minutes........the cornbread topping will be golden and the meat mixture bubbly. You can serve as is or add the following on the side: Diced tomatoes, extra shredded cheese, sour cream, shredded lettuce. My family loves this recipe and an added bonus is that you can prepare the meat mixture ahead of time and freeze it so if you have a day you are short on time, you can just add the cornbread, bake and have a quick meal. |

That casserole sound yummy and easy and most important easy to adapt to specific family tastes. Perfection.
I like the tip about making the meat ahead and freezing. I've been looking for some nbew stuff to freeze for when I deliver. Thanks!

Congrats on your expanding family. Have you tried making extra meat loaves and freezing them in individual portions? I've also found that home made mashed potatoes freeze very well too. The potatoes will take a bit of time in the microwave, but after they are very hot, just hit them with a wisk and add more milk and butter. Put the meatloaf in gravy to keep it from drying out when reheating.
