Default Calling all BAKER's, I need your input/help... THANKS!

I used the recipe below and the bread came out just slightly dry...it also didn't seem very sweet, which I was anticipating. Possibly I forgot some sugar by accident??????

I LOVE TO USE SOUR CREAM in my breads, b/c it seems to make them VERY MOIST.

MY QUESTION IS: does anyone know what product I could cut down in order to add some sour cream or can I just add it to this recipe without subtracting anything??? I was thinking 1/2 cup to 1 cup.

Also, next time i would add some additional spices like nutmeg or cinni... it thought it needed a bit more flavor. THE CRUMBLE TOPPING WAS AWESOME.


I got this recipe off of pioneer woman's new recipe site..... let me know what you think!


½ cups Butter, Softened
1 cup Sugar
¼ cups 1% Milk
2 whole Eggs
1 teaspoon Vanilla Extract
2 cups Apples, Shredded (I Used Macintosh.)
2 cups All-purpose Flour
2 teaspoons Baking Powder
½ teaspoons Salt
2 teaspoon Apple Pie Spice

FOR THE STREUSEL TOPPING:
¼ cups Light Brown Sugar, Packed
3 Tablespoons Flour
¼ teaspoons Cinnamon
2 Tablespoons Cold Butter
½ cups Walnuts, Chopped

Hello Friend,

The recipe didn't seem to have enough butter/oil/shortening to make it moist. I would add about a 1/4 c oil or butter. Sour cream is ALWAYS a good idea. A whole cup may be too much with the 1/2 cup of milk, not sure on that.

You are right on the spices. 2 t of apple pie spice didn't seem like enough. You might try adding just a little mace ( 1/2 t or so) as well as cimt and nutmeg. Hope this helps.

I'm going to try adding either 1/2 cup of sour cream plus extra spices to the recipe OR 1/4 cup of veg oil and the extra spices........ hope this will help it be a bit more moist!


I know if you overwork the batter, it can make it tough... but I didn't do that


I'm in Michigan too... it sure is nice here today

That recipe does look delicious! I'd go with the previous poster who suggested 1/2 C. sour cream, as 1 cup might be too much. Really though, sometimes it's good to just go for the gusto and see how it turns out!

Sometimes I substitute yogurt for sour cream. I love the Pioneer Woman, too! She is totally amazing and her website is so beautiful!!

Just eliminate the milk and try a whole cup. I think with 1/2 stick of butter you have plenty of oil.
