Default Pumpkin pie

I'm looking for a good easy recipe for pumpkin pie. My dad was in a accident last month and still can't get around so I'm helping him out at his house.

This is why I need a good easy recipe my granddaughter made him one when he was in the hospital but then my dad was transferred to nursing home for therapy since the H1N1 my daughter didn't want the babies at risk they ate his pie LOL!!!

So now Dad wants a pie I knew I can depend on everyone's help here too !

I've always used the recipe on the back of the Libby's pumpkin can. It turns out great!

Hi, you can also try cooks.com, they have multiple recipes, always nice since you can choose whichever is simplest or stands out. They even list the number of ingredients involved.

Okay... I found the recipe... This is nothing low fat or anything.. this cookbook is probably from the 70's, but the recipe is marked, and the spine is broken at this page..

2/3 cup brown sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon cloves
1 1/2 cup canned of cooked, strained pumpkin or squash
2 eggs
1/2 teaspoon vanilla
grated lemon rind, if desired
1/2 cup milk
1/2 cup light cream
9 inch pie shell, unbaked

Mix sugar, salt and spices; add pumpkin, lightly beaten eggs, and the milk and cream gadually. If the pumpkin is very moist, use less liquid. Brush shell with egg white. Add the filling and bak in hot oven, 425 F for 20 minutes. Reduce heat to 275 F and bake 40 minutes longer, or until knife inserted near edge of custard comes out clean. Cool at room temperature.

I feel like a idiot I thought I had a yellow cake mix to make the pumpkin crunch but I checked and I don't so I guess now I'm gonna have to do the pie thing, had so much running to do and dad had a doctors appt so now I'm off to the kitchen to bake the pies LOL!

Hope everyone has a Happy Thanksgiving no matter what I know I am going to b/c I'm so very thankful I still have my Dad!

Wish I saw this earlier...you would have LOVED my hubby's pumpkin pie recipe. it's so good no one will make pie anymore, they all ask him to do it! lol
