I LOVE turkey curry over rice! (almost as much as I like left over leg of lamb curry over rice!)

Same here! And I was just looking at the large platter of left over turkey wondering what I can do with it. I thought of doing a pot pie but I'm just not feeling it.

My bird got a little too done and a good way to fix that is to cut up the turkey in small chunks and make a turkey milk gravy. Serve over toast using some great kind of bread like sourdough for instance . Round out the meal with a vegetable or add to the gravy.

Instead of making a tuna salad sandwich you use shredded up turkey. Yummy!

I shred it and pan fry ( a little like crispy duck) with some fresh herbs and toss with some salad leaves, pine nuts and feta cheese yummy

I use the leftover broth and turkey bits to make homemade turkey & noodle soup. Tastes just like homemade chicken & noodle soup...if not better!

Also, leftover turkey bits can be used to make enchiladas or added into macaroni & cheese to make a meal.

We have turkey at Thanksgiving and Christmas, as well as other times throughout the year. I love cooking a large bird and having leftovers. Here are some of the things we do with it:

Turkey Pot Pie
Turkey Sandwiches
Turkey Salad
BBQ Turkey
Turkey Noodle Soup
Turkey Enchiladas

All-in-all, anything that can be done with chicken can be done with turkey. Maybe tonight I will use the leftover Thanksgiving turkey in my freezer.

Default turkey slop

Leftover turkey
Leftover mashed potates
Leftover veggies
Leftover stuffing
1 jar of gravy

Layer like a lasagna, bake at 350 for 30 min and voila you have slop!
