Lightbulb Pumpkin Crunch Dessert Recipe

Pumpkin Crunch

1 ( 15 oz ) can pumpkin
1 ( 12 oz ) can evaporated milk
3 large eggs
1 1/2 c. sugar
1 tsp. cinnamon
1/2 tsp. salt
1 box yellow cake mix
1/2 c. chopped pecans
1 c. melted butter
non-dairy whipped topping to garnish

Preheat oven to 350 degrees and grease bottom of 9x13" pan. Combine pumpkin, evaporated milk, eggs, sugar, cinnamon and salt in a large bowl.

Pour into a 9x13" baking pan. Sprinkle dry cake mix evenly over pumpkin mixture. Top with chopped pecans and then drizzle melted butter over the top.

Bake at 350 degrees for 50-55 minutes or until golden brown. Let cool and serve chilled.

Garnish with non-dairy whipped topping when serving.

yeah me too! I made some pumpkin brownies and some pumpkin whoopie pies last weekend.

Default pumpkin cookies

Just yesterday I did pumpkin cookies...I was looking for free dessert recipes and that was the one I found I felt like trying, don't get me wrong they are GREAT! but I din't knew how to do those pumpkin crunch, that I will do this Friday for tasting thanks so much for the recipe!!

Ingredients

2 1/2 cup gluten-free flour blend*
1 tsp xanthan gum
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1 1/2 cups sugar
1/2 cup butter, softened
1 egg
1 cup canned pumpkin
1 tsp vanilla
1/2 cup raisins or chocolate chips

Directions

Combine gluten-free flour mix, xanthan gum, baking soda, baking powder, cinnamon, nutmeg and salt in a medium bowl.
In a mixing bowl, beat butter and sugar until light and fluffy. Beat in egg, pumpkin, and vanilla. Add in dry ingredients. Stir in raisins or chocolate chips.
Drop by tablespoons onto an oil sprayed baking sheet. Bake at 350 for 15 to 18 minutes.

Those sound yummy, especially with the addition of chocolate chips

I make the Pumpkin Crunch Cake to everyone loves it around here! I had surgery last month and b/c of it I lost 10 lbs I can see it all coming back now!
