I am going to start putting up the question of the week again. Feel free to email me questions you would like to discuss at jeanine@wahm.com.
This week's question: Do you cook or eat out the majority of the time? If you do cook, what type of meals do you cook? Share your favorite recipes especially those that are low fat and healthy for us. We all need some help finding great tasting healthy recipes!

Cook, unfortunately. (I'm not much of a cook!) The only time we get takeout is if I beg DH to bring something good home to eat. Then we get either pizza or chicken teriyaki, usually.

I make simple things, no recipes really....soft tacos, mac & cheese, hamburgers, salads, etc. Hope to find some good recipes in this thread!

We used to eat out a lot more often, but have cut it back substantially in recent months. So we *might* eat out once a week or so now.

So that leaves me to cook and I'm not all that great at it, and if you want my honest opinion, don't really care for doing it either. http://www.wahm.com/forum/smileys/smiley36.gif

I cook as healthy as I can with 1 child who is a picky eater and 1 who will eat anything. I will try to get together some of my recipes later on, but one of the family's favorites is my pizza. http://www.wahm.com/forum/smileys/smiley1.gif It's just basically a homemade (or you can buya whole wheat crustin the store pre-made) made from a wheat flour/white flour mix, low-sodium pizza sauce (this summer I am actually going to can my own - so even healthier!) and lots of veggies, turkey pepperoni, mushrooms, and low-fat cheese. I coat the pizza pan with a garlic & olive oil cooking spray - YUM!

OH, and since summer is almost here - lots and lots of grilling. Lean cuts of meat, fish, and veggies.

I cook at home all the time. Maybe once a week I will pick up dinner but that is a maybe. I have been (in my spare time) putting together a cookbook with easy recipes that I may try to sell in the future. I make my own raviolli's that are to die for. Make a bunch a head of time, freeze, and then take from frozen to boiling water. In about 15 minutes you have a meal

05-21-2008, 03:48 PM
catrdogd,
do you have any healthy recipes that you can share? With the majority of americans overweight I think we all could use some help.

I enjoy cooking if it's a simple and easy recipe, I don't like the 2 hour cooking marathon with 20 ingredients. But, it is so hard to find these quick and easy recipes that are healthy.

Either that or you have those recipes that call for ingredients that you will only use for that one recipe. I just need basic ingredients that I will continue to use everyday.

Am I asking for too much?? http://www.wahm.com/forum/smileys/smiley36.gif

I don't use the "one time" ingredients. That costs too much!. I use the usual that everyone should have. What type of recipe would you like? I have one I make with beef and brocolli and it only takes about 1/2 hour. Tell what foods you like. I have searched for about 15 years on the net for recipes and still have them. I have tested them and if I like them and others liked them then I put them in a book which I am trying to turn into an e-book someday. I also have my grandma's old recipes. By the way, I am a grandma too so you can tell how old the recipes are.

I cook almost everyday. We might eat take out once a month for dinner. Occasionally it's just hotdogs and fries, but I usually do a meat, starch, vegetable deal.

Chicken(roasted whole), baked potatoes, broccoli

Beans w/ham, rice, cornbread

Fresh chicken fingers, fries, salad

Spaghetti, Garlic bread, salad

Potato stroganoff (potatoes cut like fries, browned hamburger, onions, cheese, milk) in casserole dish, canned vegetable

Chicken stir fry with carrots, onions, broccoli + whatever veggie is in season, over rice

Shrimp fried rice with eggrolls

Shrimp, fish, and fries, hushpuppies, coleslaw

I keep homemade wheatbread on hand for all meals. Raw veggies like carrots, cucumbers, celery, bellpeppers with dip.

Pasta, sauce (Alfredo or cheese) tuna or chicken and frozen peas and carrots for a one pot meal.

Wings, rice canned corn.

Roaster meal...Chuck roast, potatoes and carrots.

Hmmm maybe I should create a cook book. I haven't even thought about desserts, breakfasts, and lunches.

I admit sometimes I get bored with it all and fix grilled cheese and soup or lunchmeat sandwiches and chips.

Mostly cook. We keep it pretty simple. Pot roast, chicken with rice, spaghetti...things like that, with vegetables of course. We eat lunch out on a saturday a few times a month but dinner out is less frequent. (Usually a special occasion.) I would love to see some fast & healthy recipes to add a little variety to our meals.http://www.wahm.com/forum/smileys/smiley1.gif

I hardly eat out, mainly because I can't afford it on a regular basis, being on a tight budget means I shop in bulk and store things. It also gives me much control of what goes into my body.

Werarely eat out.

I bought a Showtime rotisserie last month and we've been using it alot with chicken quarters sprinkled with Watkin's Poulty seasoning, salt, and pepper. Simple, but delicious and inexpensive. Quarters usually cost between 49 cents to 89 cents a pound here. Serve with some baked potatoes and veggies. You have great meal! I do WW so eating at home is easiest for me.

I also like to do a lot of OAMC recipes and keep them in the freezer for the days I don't want to cook. Waiting on bf to buy me a new freezer soon so I can go crazy filling it up with meatballs, casseroles, and other yummy stuff. I'm still working on adding recipes to my website soon. I've been cleaning house, looking for a job, and SFG gardening. I need to take the time to post them.

I try to do some of both -- hate to eat out alone, except, perhaps mid shopping trip.
-Seems cooking was more interesting when I had someone who "liked what he liked when he liked it" around.
At first I ate everything he didn't like : beets, peas, cold sauerkraut, etc.
Now, occasionally have Healthy Choice or other prepared meals such as pot pies, but try to do relatively healthy & avoid (impossible!) onions & garlic -- which give me headache with nausea if not countered with papaya tablets.
Get bored. Any suggestions?

Well I mostly cook now:) I do a modified Atkins diet for myself and regular food for the rest of the crew.

One of my favorite dishes is taco pie.

I use a 9X13 glass pan. Turn the oven up to 350 and spray the bottom of the pan with butter spray. I use 4 boxes of the cornbread mix. I make two boxes and put it in the bottom of the pan. I set the pan in the oven. Then I (prior to making the cornbread) mix up a pound of cooked ground beef with taco seasoning and onions. I wait until the cornbread is half done then take it out. I spread the beef mixture on the cornbread and then make the other two boxes. I put that on top and cook until brown. Serve it up with salsa.

Looks like a good recipe even though I get headaches and upset from too much onion and garlic. One could perhaps use W0rchestershire sauce in minimal amount.
thanks. I copied it for perhaps use at church suppers etc.

Hey there! I mostly cook ... wish we could eat out more, but with two teens and two tweens, it gets expensive. We limit anice dinner out to once or twice a month.
Here'sa recipe for Pasta with Light Alfredo Sauce:
1 lb fettuccine or linguine, uncooked
1 1/2 T butter, melted
3 garlic cloves, pressed
1 1/2 T all-purpose flour
2 cups skim milk
3T light cream cheese
1/2 cup (2 oz) grated Parmesan cheese
2 T chopped fresh parsley

Cook pasta according to pkg directions; drain and keep warm. Meanwhile, in a large saucepan, melt butter over low heat. Add garlic; cook and stir 30 seconds. Blend in flour; cook and stir 1 minute. Gradually whisk in milk. Cook and stir until mixture comes to a boil and thickens. Remove from heat; stir in cheeses and parsley until cheeses melt. Toss with fettuccine. Yield: 6 servings

Enjoy! http://www.wahm.com/forum/smileys/smiley20.gif

We mostly eat at home but sometimes on Sunday I make it the day of rest for me in the kitchen and we eat out.

Fridays I have to say is Pizza night. Just about every Friday we order pizza delivery. It is tradition.

Generally I make one pasta, one chicken, one fish or seafood, and an easy meal or two (like hot dogs). Although since I've been a rep for Peddlers Kitchen there has been a lot more variety and a lot more yummy dishes! :)

Hello:

Spouse and I prefer to stay at home and cook. We rarely go out for a meal unless we have to make a trip to the Big City.

We also love making our own pizza (Kraft mix) rather than ordering out or cooking frozen. Trouble is, we put so many yummy toppings on, the pizza has a hard time cooking!

We eat at home most of the time. I might get fast food take out once a week, but have been cutting it out lately.

One of my favorite recipes: 15 Minute Fajitas

3 Boneless Skinless Chicken Breasts
Stoplight peppers (one orange, one red, and one green)
2 medium onions
2-3 fresh garlic cloves
smallest size flour tortillas
Toppings: Sour cream, shredded cheese, salsa and guacamole

Slice peppers & onions. Place both in the Deep Covered Baker. Press garlic over onions and peppers using garlic press. Brush chicken breasts with Garlic Infused Canola Oil and sprinkle liberally on both sides with Southwest Seasoning Mix. Cover & microwave for 15 minutes on high and check with Pocket Thermometer to make sure the chicken is fully cooked at 170 degrees. Chop mixture using the Salad Choppers right in the baker. Heat up tortillas in Large Micro Cooker about 1 minute in microwave. Serve with sour cream, shredded cheese, guacamole & salsa!

Good question. It just depends on where my focus is. Lately I've been really engrossed in my business so we've been eating out lots. I feel unhealthy because of it. When I am focussed on cooking I have all my dinners planned out for the week with the weekly shopping list for each one. I have a 4 week rotation. I used Shop N Cook to set it up which is a nice little program for $40. It's nice to just go print out a week of recipes and the grocery list to go to the store. I exported them to Word documents if anybody is interested. They are all vegetarian and mostly vegan and my kids will eat them. I have them in 4 different emails ready to send out if you want me to send them to you. I could upload them somewhere I suppose but if you saw my "freaking out/overwhelmed" post you'll understand that it might just set me over the edge if I try to figure out how. http://www.wahm.com/forum/smileys/smiley36.gif

I cook most nights. We do eat out about once a week. When I do
cook it is stuff like spaghetti, tacos, flank steak, chicken, and hamburgers.
When it is hot I like to make main dish salads. And when it is cold I love to
create soups. I try to use as many whole foods as possible. I like to stay
away from prepared, prepackaged foods.

Since it is just the two of us I'd have to say about 50/50.
The price of food has really gone up! Tonight I went to the store and spent $40 ...I did not get much of anything! Neither of us eat leftovers, heck with two growing boy's and a daughter at home there was not much left over. I was throwing food out so now we cook smaller amounts.

Now, we do cook alot of stuff on the grill and we eat lots of fresh veggies.
My hubby loves to cook! My favorite is shrimp skews on the grill along with veggies wrapped in foil with peppers and purple onions! I know just this past week we have went out three times for dinner and out for lunch today.

Some foods are just not that much moreexpensive out (for two) and I love Red Lobster and El Chico! My DH favorite home cooked meal has to be chicken fried steak with white peppered gravy, lots of mashed potatoes and broccoli.

My kids are older, and over the last school year we ate out (fast food) A LOT! We live in a rural area; middle and high school are more than 30 min. away. Then soccer practice, band practice, 4-H meetings, play practice, etc . . . too hard to go all the way home for a meal and back out again. Also I was teaching and taking classes and caring for parents and starting a direct-sales business, so no time to cook. Convenience foods at home were costing as much as eating out. (And no dishes to washhttp://www.wahm.com/forum/smileys/smiley1.gif)

We try to eat salads and wraps and grilled chicken as much as possible; no french fries; tea or water instead of pop. When I can, I keep grapes, crackers, baby carrots etc. in the van for snacks. Buteating out'sgotta stop, with gas prices and tight budget and only one left at home next year.

Looking back I wish I hadn't felt I had to give my kids so many options for food. They think they should only have to eat what they love. And they love fast food and pizza! I'm cooking more at home now, so I'm exited about all the recipes and ideas on this thread!

This 2nd post is kinda late. Like I said before we mostly cook at home. Healthier and less expensive.

Bear with me as this is the way my brain works.

half ham .99 a pound $12
macaroni 1pound 1
5 lb cheese@ Walmart 15
1lb noodles 1
3lb rice @dollar general 1
1lb beans 1
2 cans corn or favorite veg 1
jiffy mix cornbread 1
10 lbs potatoes 6
1lb carrots 1
lettuce 1
cucumber 1
5lbs hamburger 10
2lb sphaghetti 2
Fresh & frozen veggies 5
3 chicken breast @ .99lb 3

Sunday
- Bake ham. Serve with mac and cheese and veggie. Carve remaining ham
for sandwiches Freeze. Save bone and scraps to flavor beans.

Monday - 1 1/2 pounds of ground beef for spaghetti and salad.

Tuesday
- Beans with ham over rice with jiffy cornbread. If kids are picky
mash beans as refried and serve on tortillas with lettuce, tomato,(when
it is safe again) and shredded cheese.

Wednesday - Chop 2
chicken breast, 1 onion, 3 carrots sliced really thin. Stir fry till
done and tender. Sprinkle with flour, stir till coated, add 2 1/2 cups
water. Stir till thickened add 1 bunch fresh broccoli stir till just
tender. Serve over rice. Season with Soy Sauce and add crispy chow
mein noodles if desired.

Thursday - 1 1/2 lbs ground beef
browned. Cut 3lbs potatoes like shoestring fries. Slice onion. Layer
potatoes, ground beef cheese and onions in casserole or roaster. Add 1
cup milk, bake till potatoes are tender. serve with salad.

Friday
- Chop 1 chicken breast stir fry till done. Make white or cheese
sauce, cook frozen peas and carrots in sauce. Cook noodles till
tender. Combine all.

Saturday - Cheeseburgers from groundbeef and french fries from potatoes.

There
is still plenty of rice, ham, cheese, macaroni and maybe some veggies
left over for next week. Mix and match as you please. Make it
healthier with more veggies and baked chicken instead of stir fry,
heartier with more meat or potatoes.

Make spaghetti sauce
from tomato paste and sauce mix for $1 instead of $2.50 or more per
jar. Make your own white or cheese sauce from scratch or use sauce
mixes at $1 a package.

I posted this in a cheap meals thread.

If anyone wants exact recipes PM me an e-mail address

Hamburger is quick to cook in. Much better plain than with a lot of additives unless you're limited on salt.
I sort of vary it, as don't like to eat our alone. Am in a couple of groups that do -- one about weekliY 9widows at church) and one monthly - With Christian Womens Club -- plus a couple of lunches when shopping or promoting my Organo Gold product.
Eating out can add up ($$)! The grocery list over the weekend was revealing, though I don't use that much pasta or potatoes, & have some drumsticks in freezer I don't get to using. (Takes time from home business on computer!!) Admit I use too many frozen meals -- quick and convenient & usually mid-level in cost.

We used to eat out alot. But now hardly at all. Maybe 2-3 times a week and not everyweek. Sometimes we go 1-2 months eating at home instead of out. We're on the money makeover plan and let me tell you, it is great. We've already killed off one payment which was my school loan in 5 months and have 3 credit cards to go. If anyone wants to know how it works send me a pm. The whole point to it is getting rid of all debt and living CC free. Only cash. Not even CC's for emergencies. The only CC allowed is the debit card which really isn't one but is treated like one.

I think it's great. And yes, you can live without them.Edited by: hasbun1998

Lucia, Congratulations on paying down the debt! Hooray for you!http://www.wahm.com/forum/smileys/smiley32.gif We're working on that goal too. I'll look into moneymakeover.

We certainly have been paying more attention to what we pay for food, and eating fast food much less. I was proud of my low grocery store bills until I really checked the bank statement for debit-card charges at fast food places. http://www.wahm.com/forum/smileys/smiley9.gif With three teenagers always on their way somewhere, we were spending nearly $100 a week at drive-through windows! $3 or $4 a person over several days adds up!

So I'm learning to cook quick, easy, delicious, healthy, cheap meals at home! The crock pot, microwave, and George Forman grill are my best friends.

I'm also glad to hear that veteranmom. In case you can't find it, it will be on daveramsey.com. He also has a tv show on fox news(onsatellite)in the evening. Don't know if you get it or not but he is great to listen to. Callers call in with questions and you hear success stories at the end of the show.
And that is so great that you are cutting down on eating out. We used to spend around that much too. But now we are able to keep around 2 to 3 thousand in the bank at a time.

Good luck!

I cook and love cooking. We go out about twice a month if that. Don't get me wrong I love going out too.

I make a list of what I am going to make for dinner for the week and that is what I shop from. It saves money and I know what I am cooking every night. Sometimes I jsut have a free for all, the kids make top ramen or a sndwich and I eat a salad.

My favs to make and eat are Tamale Pie, Tortilla Pizza, Nachos, sweet and sour chicken and Breakfast with homemade Cinn rolls, YUM!!!

Veteran Mom?? My life would have been a lot different is I had joined the air force reserves when single and a nurse in the Chicago area. I married late. Just have step kids I've known the 3 years since my husband's death. His son was over today & we shared half cans of soup opened 2 nights abo: cream of mushroom & beef veg. mix well-- especially when the freshly cooked asparagus I forgot to put away last night was added for volume.
Add a deli meat chicken sandwich and fruit.
I put things together on whim, and he has little tolerance for sugar!

Who knows how different our lives might have turned out with just one change? I was lucky to be in the AF during the mid 80s - relatively peaceful, and we lived in Europe when the dollar was very strong.Great memories.

It sounds like you are lucky to have your stepsons, and they are lucky to have you.

Your eclectic soup sounds unusual but tasty! I love asparagus alone or with anything! In Germany they called it spargle (sp?) and restaurants had whole spargle menues when it was in season.

Sorry, Georgia, I have no advice on your cookies and comcast question. The technology isbeyond me, but that doesn't take much. http://www.wahm.com/forum/forum_images/post_button_smiley.gif

I love to cook and usually eat in. If it can be cooked in a crock-pot, chances are, I've either created or discovered a way to do it. My crock pot is used almost as often as my coffee pot (5 kids, homeschool, keeping up with the housework and laundry, laundry, laundry...and did I mention laundry?), which is a lot! And the less prep, the better. I will cook a whole chicken and pick the meat off the bones, but the time involved in that is well-spent, as we get a huge pot of chicken rice soup LOADED with fresh veggies. I serve it with some sort of bread (french, garlic, fresh-from-bread-machine, or grilled cheese sandwiches), and generally get 4 meals for all of us plus left-overs for DH to take to work.
A recent favorite - 2-3 lbs pork tenderloin or boneless, skinless chicken breast with maybe 1/2 cup of water, cooked until extremely tender in the crock pot; mash it up with a potato-masher, add bbq sause to taste. Serve with bread for sandwiches, or over rice. Nice green salad on the side, or your choice of steamed (fresh or frozen) veggies.

Mash it up with a potato-masher? That's new! I'll try it. Imade tuna casserole in the crock pot for the first time and it seemed mushy. Did I over-cook the noodles?

Its fun to cook when appreciated. My husband would 'put down' anything not like he grew up with in another part of the country.
I know its healthier to prepare fresh fruits & vegetables at home, but we were in habit of pan frying many meats (fish & chicken) as that was quickest.
So-- when I want to take the time from home business-- where I never get enough contacts made, blogs or forums participated, I just do what's fastest. Do crave certain vegetables & fix them some times.

Just got some free vegetables from friend of a friend. Tried kohlrabi for first time, and not too impressed. 1st of 3 zucchini cut into was rotten inside, but do have 2 new recipes: one for zucchini bread and one for casserole if anyone interested can request. I also received 2 cabbage & promised her recipe for the below:

Freezer Slaw: 1 medium cabbage,shredded, 1 tsp. salt,1carrot, grated. 1 green pepper,chopped.

Mix salt with cabbage, let stand 1 hour.
Squeeze out excess moisture. Add carrot & pepper. while standing - make dressing:
1 cup vinnegar, 1 tsb. whole mustard seed, 1/4 c. water, 1 tsp. celery seed, 2 c. sugar . combine ingredients & boil 1 min.
cool to lukewarm. Plur over slaw mixture.Pour into containers, cover & freeze. this thaws in few min. for serving, & leftover slaw can be refrozen easily. If anyone has good, cooked kohlrabi recipe, please send.

Even though it requires extra planning and effort, I cook almost all of our meals at home because I want to make sure my family is getting high quality food and because it's sooooo.... much more economical! I made a "to die for" meal the other night on the spur of the moment. I hadn't planned ahead, but I knew I wanted to make something that used spaghetti sauce. Unfortunately I didn't have any hamburger to use in the sauce. So I took about half of an Eckrich smoked sausage, chopped it up and sauteed it with onion, garlic and green pepper. Then I added the normal spaghetti spices and tomato sauce, tomato paste and the special touch of several leaves of fresh basil (chopped). I ended up serving it over spaghetti noodles, but wow, what flavor! The whole family commented on how delicious it was.

Well, it's off to the kitchen. It's time to finish making my challah bread for tonight's Shabbat meal.

Hi,

Nice to read your posting. Also nice to know you like to cook. Having been raised on a farm. it was nice to learn cooking from my father, who had a big pot of something on the stove when we got home from school. This has come in handy since my wife broke her hip back in October 2007, and since that I have been the main cook in the house.

Since money seems to be getting tighter we are eating what I cook more. Now, we'll usually just have one meal a week that we get to bring it. One of the best things I made lately was pretty easy. I bought a 10 lb bag of potatoes when they were on sale for next to nothing. Brought them home and peeled them all and then diced them - yes, this took a little bit of time, but not too bad. Then I put some olive oil in my large skillet and put the diced potatoes in there with Italian Herb seasoning. Cooked them until they were done and transferred to a plate to cool. Once cool enough I put them in freezer bags to freeze. We had some the other day and they were pretty tasty and so cheap! I can get pretty creative using these in several dishes.

Hope y'all enjoy!

the link 2 emails ago -- re. food burning at appropriate times vs. diet states several principles from Herbalife -- a program I lost 35 pounds with several years ago. It also recommended several meals per day, with 2 or the 3 being liquid from their high protein compounds. Since I live alone, I have found it easy to snack during the day - often not on the recommended foods.

If I over eat for a day or 2 , I try a meal of ensure or Boost or a diet protein mix. Unfortunately, that seems to call for munchies. but could control if I had to.

If I could afford to, I think I'd eat out for every meal. I just don't enjoy cooking. I get too stressed out. Probably goes back to my childhood and never being allowed in the kitchen to help and we ate out a lot. Anyhow, my husband would much rather eat at home every meal - which he grew up doing. He does most of the cooking and I do the clean-up. I can make meatloaf, or tater tot hotdish, stuff like that. I really do love hotdishes or casseroles, depending on where you live, so if anyone has some easy recipes... I'm going to check out the cookbook forum on here too. I would have to say that we do not eat out that much. I have a system that I do every two weeks when I get paid. I sit down and plan every dinner that we have and then I create my grocery list from that. Then on the grocery list I add other things that we need. I never take my children grocery shopping with me, I clip coupons from papers and online and I always buy our groceries using cash. I always take a certain amount with me and I never exceed that amount. With this tight economy and the prices of everything going up each week I feel that I have to do this. I watch different food channels to get new recipes and also look online.

I have to say this has been quite effective for me and my family.

I've been trying to eat more healthfully and more economically, so eating at home almost always. But it does take time to cook from scratch, and planning to use fresh stuff and leftovers, instead of pulling some prepared thing out of the freezer or pantry. I'm determined to not throw food out, so I've had to plan shopping and portions more carefully. Again the trade-off is time.

We used to eat a lot of fast food becauseour teenage kids arealways on the go and high school and activities are far from home.

I like to eat in restraunts because it's nice to be waited on and not have to shop, plan, cook, set the table, and do the dishes. It's not so much the food for me; it's the luxury of being served. Too pricey, though.

Boy, this thread has lasted a long time! Must be a popular topic!

We eat at home most of the time. (But we love to eat breakfast out on weekends.) Whenever I make spaghetti sauce, I double up on the recipe and freeze tubs of leftover sauce for future meals. Recently, I also started cooking two boxes of Barillamultigrain pasta at once. What we don't use for our meal, I freeze in a plastic zip loc bag. It's so convenient to pull the bag of noodles out for the next meal. No boiling, no mess! And they taste as fresh as if I had just cooked them. http://www.wahm.com/forum/smileys/smiley2.gif

You're asking for quick meals, here's my best: chicken breasts in a frying pan with butter, shake on some garlic powder, rosemary, thyme and salt. Turn, shake seasonings on other side. Cook through.

It smells wonderful, fancy enough for company, healthy; you can serve it with rice or noodles, or on hamburger buns with a little mayo. Great left over. I cut it up with salad. I've made it in my Foreman grill, a little messy to clean. It's about the only way I cook chicken breast any more. Never met anyone (including children) who didn't like it.

I buy the packages of frozen chicken breast and pull out what I need. Defrost in microwave 3-4 min. They're huge so I cut them in half after cooking.

If you try it, let me know what you think.

I'm trying to save money and stay away from fast food. School started and soccer practice/games keep us out 'till 8:30; everyone walks in the door hungry. Soccer playing Darling Son packs a snack after school so he's not starving at game time. It's hard to drive past the McDonald's etc on the way home.
This week we had grilled cheese sandwiches and tomato soup one night, fishsticks one night (with carrots and leftover broccoli), spaghetti one night (I heat up a jar of sauce with a bag of thawed meatballs, add frozen/toasted garlic bread - very fast) The chicken breasts I mentioned are quick, too. Add a can of favorite veg, maybe noodles or rice. Crockpot is a lifesaver, too, especially when the weather gets cooler.
I know I could save more by cooking from scratch but it just ain't gonna happen. And as much as I long for the luxury of a real restaurant, it wouldn't help with the time factor. Any more ideas for quick meals are appreciated. Casserols won't help; no one home to put them in an hour ahead. Thanks for all the great posts!

That sounds delicious, Lynn! I'll check out the Taste of Home website, too.

I agree, Georgia. Just 'cause you're home all day doesn't mean you have time to cut, chop, shred, saute, simmer, knead, etc. all day.

Some things I will make because it's easy and way cheaper than pre-packaged, like pie crust. Once you're used to it, it's fast, and it costs about three cents to make your own compared to 2.50 for prepared.

But I like brownies and cakes from a box better than from scratch, and I doubt I'll every spend the time to make lassagna or meatballs or stuffing or spaghetti sauce again. Maybe ONCE more, for a VERY special occasion, but by then I'll be out of practice!http://www.wahm.com/forum/forum_images/post_button_smiley.gif

Obviously I'm not a gourmet, and I admit the people at Stoffers, Banquet, Campbells etc. can cook some things better than I.

If I get hungry for some really good lasagna or clam sauce or creme brulle, I'll splurge and EAT OUT!

Sunday dinner does not count as a lunch - for savings, but an enjoyable habit to maintain contact with people.
Step son treated me to dinner at white Pines Inn -- a lovely nature area and State Park about 30 miles from here -- whance to enjoy outdoors before fall weather makes coats necessary. Month early 'birthday celebration"!

Turkey Meatloaf

1lb Turkey Meat
1 egg
1/2 Milk (I use 1%)
1 cup dry rolling oats (instead of breadcrumbs)
1 package of onion soup mix
A few shakes of garlic powder or fresh chopped is up to you ;)
Dash of pepper (I do not use salt since the soup mix is alredy salty)

Preheat oven to 350
Mix all ingredients togetherandplace in a loaf pan
Bake covered for 30 to 40min's or until center is done

All of these recipes sound great.

I usually save the leftovers for lunch the next day for myself or the kids. The problem that I am running into is at my sons preschool, they cannot have any peanut/peanut butter type products b/c one child is very allergic, and they go the park/library/somewhere during lunch time so you can't pack anything that needs to be heated.

I am so short of good lunch ideas for my little guys (4 and 1) - any good lunch suggestions would be greatly appreciated.

It is a huge problem in todays society with obesity and kids not knowing what healthy food is. Cook, unfortunately. (I'm not much of a cook!) The only time we get takeout is if I beg DH to bring something good home to eat. Then we get either pizza or chicken teriyaki, usually.

I make simple things, no recipes really....soft tacos, mac &amp; cheese, hamburgers, salads, etc. Hope to find some good recipes in this thread!

I cook most of the time too.

For simple recipes of reaaly good food... you should invest in a crock pot, and get a crock pot recipe book. It's great and time saving. You put what the recipe calls for in the pot, and let it slow cook for the time specified. It's really simple, and very good! Most recipes are inexpensive to make too. http://www.wahm.com/forum/smileys/smiley4.gif I love crock pot cooking... you and your hubby will love it!

Good luck with it --

For me, cooking with a crock pot is really a blessing. Here is a favorite: pot roast stew.

(I always buy all natural & organic)

(1) Beef chuck shoulder roast
(1) small package of baby carrots
(4) medium potatoes
(1) medium onion quartered into small sections
(4) beef bullion cubes
Mrs. Dash seasoning (for good flavor)

Cut beef into small portions, throw in carrots, potatoes, onion, bullion cubes and (Mrs. Dash) spices.

Cook for 6-8 hours on medium (or High if you have less than 6-8 hours). Serve with noodles/rice (optional).

Serves 4-6.

My wife loves this, especially on colder days like we're having now in November.

For us it's 50/50. I hate to cook - hate the planning - hate the cleanup. We end up eating out more than our budget likes! I try to go for easy, one or two pot meals. My husband loves to cook on the grill and usually cooks every Sunday, which is really nice (except he leaves a mess!)

One thing I make a lot is Seven-Layer dinner. Everyone likes it and it's good as leftovers too. This should feed about 6 people. With my 20 year old son, it feeds 4 nicely!
1-2 Potatoes, peeled &amp; sliced
2 Red Peppers in 2" long thin slices
1/2 Onion, diced
Several carrots in bite sized pieces
1 1/2 lbs ground beef or buffalo
1 large can of diced tomatoes
1/2 lb of bacon

Put the veggies in an oven proof dish, one layer at a time.
Pour 1/2 of the tomatoes on top of the veggies.
Spread out the beef in a layer on top of the veggies.
Pour the other 1/2 of the tomatoes on top of the beef. You may need to poke a few holes in the beef to get the liquid to go down. Then add water so the beef is almost covered with liquid.
Arrange the bacon slices on top.
Cover and Cook for 1 hour 40 minutes at 350 degrees.
Remove cover, cook for another 20 minutes.

I usually serve this with biscuits. I have a good, easy food processor recipe if anyone's interested. Both recipes are from Marjorie Standish - Cooking the Maine Way.

Pamelab, do you have a Fred Meyer by you? I know ours has a whole freezer section with organic and vegetarian items in it.

Hmmmmm, I never heard of Fred Meyer, do they have a website that I can view?
Why yes they do, go to www.fredmeyer (http://www.fredmeyer.com).com (http://www.fredmeyer.com%20)

Right now we live in an area that, unfortunately, does not have very many decent restaurants so we eat in most of the time when we are not traveling. Thankfully my husband is a good cooksmileys/smiley17.gif

We are both really health conscious so we eat as cleanly as possible. Mainly fruits and veggies, whole grains and lean protein. One of our main staples is chicken breasts, below is one of our favorites:

<div ns="http://www.w3.org/TR/4/loose.dtd" style="width: 350px; : left; margin-bottom: 10px;" ="basic_style" align="left">Chicken Piccata</span>

1 can artichoke hearts (packed in water, not oil)

4 skinless chicken breasts

6 Tbsp. capers

1/4 cup lemon juice

1 tsp. garlic, minced

1/4 cup flour

2 Tbsp. olive oil

2 cups sliced mushrooms

<br ns="http://www.w3.org/TR/4/loose.dtd" clear="all"><div ns="http://www.w3.org/TR/4/loose.dtd" ="basic_style" align="left">

Coat
chicken with flour. In a large skillet, cook garlic and oil over
moderate heat, stirring constantly, until garlic is pale gold. Add
chicken and brown 2–3 minutes on each side.

Add lemon juice,
artichokes, capers, and mushrooms. Simmer, covered, for about 30–35
minutes. Turn and baste the chicken occasionally. Cook until chicken
juices run clear. Makes 4 servings.<div style="margin: 14px 0pt; padding: 0pt;">Preparation Time: 10 minutes

I cook most of the time! Because of couponing, my grocery bill is very low, which helps pay off other bills (the money we're saving). Most of the time, I cook "home cookin" type meals. I very rarely use the frozen boxed stuff. I do a lot with leftovers and turn them into other dishes. Tonight, for example, I took my leftover chicken with gravy (just put boneless skinless chicken breasts in the crockpot, salt and pepper, a can of crm of chicken soup, 1/2 soup can of evaporated milk, turn crock pot on high and leave for the day) and made it into chicken and biscuits (warm up leftover chicken w/gravy, mash with a fork, add more evaporated milk, flatten some biscuits in a casserole dish, top w/chicken mixture, top w/more biscuits, put in 350 degree oven till biscuits are golden. Hope this helps!!

Here is another one that has become a regular at our house. It was recommended by the fitness instructor, Kathy Smith. Since we don't eat much beef I usually substitute low fat ground turkey for the beef. Enjoy!

PErsonally i agree with a few other posts, cooking is a way for me to relax and be creative at the same time. I like to find a decent looking recipe online at allcooks or allrecipes and put my spin on it and see how it comes out.

I personally also very much like allrecipes and I never follow a recipe the way it is written, but then I usually can recreate something I made that I really like. It has it's ups and down I guess.

I am vegan and the rest of the family is vegetarian, so we cook most of the time, with occasional Thai or Mediterranean take out to round out the month.

My hubby makes a delicious tempeh and veggie sir fry, and one of my favorite things to cook is a vegan pesto sauce.

here is my recipe requested "by 23rd: Pineapple upside-Down Cake
If you like larger quantities -- in this case recommended by my late husband and enjoyed by many people since : bake in 14 " skillet.
1/3-1/2 cup shortening -- healthy(veg.oil) or not ( butter or margarine),
1 cup brown sugar
1 20 oz. can sliced pineapple, drained( save juice- substitute for water in cake recipe).
12 pecan halves. (maraschino cherries if desired.Basic recipe had suggested 7 -- I didn't bother with).
heat oven to 360 degrees.
Layer first 3 ingredidnts in bottom of pan. May use less to taste, but wand butter melted and cover bottom of pan).
Mix a yellow cake mix - reg. size-substituting pineapple juice for part of liquid. Pour batter on top of other ingredients.
Bake 45 min. or until wooden pick inserted in center comes out clean.
Invert onto plate. Leave pan over cake a few minutes. Serve warm and, if desired, with ice cream or whipped cream. ( orig. Betty c. - in 9X1 1/2 " round pan made 9 servings.

I haven't been one to like to cook too much! I guess it took up too much of my precious time! We eat in most of the time but I have liked cooking more recently. It has to do with beingbetter organized!

I am more about schedules now and I also have scheduled my menu plan and that really helps!

Here is a good recipe that I have enjoyed!

<DIV id=message588288126 ="undo clearfix">
<DIV id=yiv1532287885>
Chicken Divan

4 Boneless Chicken breasts(boiled and cubed)
I head of broccoli(cut up and half cooked)
I can of Cream of Chicken soup
1/2 cup of Mayo(not miracle whip of salad dressing)
1 tsp of curry powder(or more I like 2 or more)
1 TBSP of lemon juice
1/2 cup of grated old cheddar
1/4 cup of italian bread crumbs

Place broccoli on the bottom of a 9X13 pan, top with chicken. Mix theremainig ingredient except the bread crumbs. Pour on top of thechicken and broccoli top with bread crumbs and bake@ 350 for 30 min. You can leave out the bread crumbs!

Enjoy, alter as you wish some people put a whole cupof cheese in or on top.

I mostly cook now, although I'm sort of new to cooking. I just started feeling guilty about all the frozen pizza and fast food and didn't wantmy kids to be eating junk all the time.

I found if I sit down before I go grocery shopping and plan out the meals for the week, then I buy just what I need and it keeps me from trying to have to figure something out when I'm tired and don't want to.

Oh and I LOVE my crockpot. This is my favorite super simple recipe.

EASY JAMBALAYA
One box Zatarins jambalaya
sausage/chicken/shrimp (whichever you prefer or have on hand, but it's really good with all three or a combo too)
veggies of your choice (I usually do peppers, onions, can of tomatoes)
Water as per box

Cook on low 8 hours and maybe serve with some bread. Yum!

Yes, we are doing well for ourselves, and our children are wonderful! Whenever we are out in public together, we are given compliments about how well behaved our children are. We have truly been blessed with our well mannered children; a 15 year old daughter, and 3 sons, ages 13, 8, and 7. Of course, we know that teens (esp. girls) can be a handful at times, but we are very happy at how well behaved they are.

If you'd like to know more about our business, pm me.

Thanks!

I cook most of the time. Not because I really love cooking, which I don't, but because I can eat more healthy. I am kind of a clean freak and like to know that hands were washed before the food was prepared, and with eating out ya just never know what goes on in their kitchen.
