OK - this is probably a very simple answer, but how do I make the little copyright symbol, you know the c with a circle around it??

The © is referred to asa special character entity. Other examples are the Trademark symbol, the Registered symbol, etc.
If anyone is interested here is a list of a lot of different special character entities that can be used with HTML

The special character for the percent symbol is &#37;
