Parsley tea may cause your menstrual cycle to come a little before you might expect, by the way, but it also said to help flush out your kidneys and lower high blood pressure. Since it has a good amount of chlorophyll in it you may even detox a little bit from mercury within your body; however, if that is what you're going for then cilantro is a better choice.
There is also a big diet fad that practically revolves around parsley tea since it stimulates water elimination. Unfortunately, many people don't quite grasp the concept of water not equaling fat content and think they're losing a ton of weight when chugging down this sort of tea. The body, of course, needs water though!
It does help the absorption of manganese and potassium from what I am aware of though.
