Congrats on your expanding family. Have you tried making extra meat loaves and freezing them in individual portions? I've also found that home made mashed potatoes freeze very well too. The potatoes will take a bit of time in the microwave, but after they are very hot, just hit them with a wisk and add more milk and butter. Put the meatloaf in gravy to keep it from drying out when reheating.
