You are 100% right on all counts.
I believe the way it was explained to me, was that they would check by using the info from my background check (social security number, W-4, etc.) to see who/where else I may be working. So, they won't be calling around, but it seems that they will be doing "soft inquiries" on my credit or otherwise accessing my income information.
