Chili, Stew, Lasagna, Dorrito Casserole, Cornbread casserole.......
Cornbread Casserole:
Brown 2 lbs. ground beef with 1 large onion and 2 bell peppers diced.....drain.
Add 1 cup of your favorite salsa and one can of whole kernel corn (drained)
In large casserole dish layer the following in order......
Meat mixture
3 cups shredded cheddar cheese
2 pkgs. Jiffy cornbread mix prepared as per pkg.
Bake @ 350 for about 45 minutes........the cornbread topping will be golden and the meat mixture bubbly.
You can serve as is or add the following on the side:
Diced tomatoes, extra shredded cheese, sour cream, shredded lettuce.
My family loves this recipe and an added bonus is that you can prepare the meat mixture ahead of time and freeze it so if you have a day you are short on time, you can just add the cornbread, bake and have a quick meal.
