My DD8 goes on egg kicks as well. She loves them too. Lately she likes to make deviled eggs, otherwise she doesn't like the yellow part either. But mixed with mayo, she'll love it.
There's lots of protein in eggs. They are good for you and I would think kids don't have to worry about cholesterol as much as adults unless they already have a weight problem. I let her eat as many as she wants and my budget will provide. When on a kick though, she'll eat maybe two or three a day, but her kicks don't last forever.
