2 lg. chicken breasts, boned and skinned
3 eggs, beaten
½ tsp. salt
1 c. fine bread crumbs
8 tbsp. butter
½ lb. mushrooms, sliced
4 oz. Muenster cheese, shredded
1 c. chicken stock
Juice of 1 lemon
Step 1- Cut deboned breasts into strips. Marinate in egg and salt one hour. Roll in bread crumbs. Brown lightly in butter. Transfer to 1 1/2 quart casserole dish. Slice mushrooms over chicken. Sprinkle cheese over mushrooms. Pour chicken stock over all.
Step 2- Bake 350 degrees 20 minutes covered and 10 minutes uncovered, or until heated through. Pour lemon juice over before serving.
